As bittersweet as Sundays are, I do look forward to Sunday mornings. It’s the one day of the week Dave doesn’t work, so we can sleep in and be lazy. I usually try to get us out of bed in time to watch some of Sunday Morning; it’s one of my favorite shows. This morning I made a potato, spinach, ham and cheddar frittata with some toast & goat cheese. It was pretty quick and easy to make, although I’ve decided that I need to spring for a veggie peeler – peeling potatoes by hand is unnecessarily tedious.
